Instructions
- Preheat Oven: Set your oven to 350°F (175°C) to preheat while preparing the ingredients.
- Prepare Sauce: In a medium saucepan over medium-low heat, melt ¼ cup of butter. Sauté the diced onion and minced garlic until they are soft and fragrant, about 3 minutes. Stir in ¼ cup flour and cook for 1-2 minutes to form a roux that will thicken the sauce.
- Thicken Sauce: Gradually whisk in 2 cups of milk and 1 cup chicken broth over low heat, continuing to whisk until the mixture is smooth. Bring the sauce to a boil, then continue cooking for 1 minute to thicken. Season with ½ teaspoon salt and ¼ teaspoon pepper to taste.
- Assemble Layers: Grease a 9″x13″ baking dish. Arrange one-third of the sliced potatoes in the dish in an even layer. Season lightly with salt and pepper. Pour one-third of the prepared sauce evenly over the potatoes. Repeat this layering two more times, ending with the sauce on top.
- Bake: Cover the dish with foil and bake in the preheated oven for 45 minutes. Remove the foil carefully, then bake for an additional 35-45 minutes until the potatoes are tender and the top is golden brown. For a crispier top, optionally broil for 3-4 minutes but watch carefully to prevent burning.
- Rest: Remove the scalloped potatoes from the oven and let them rest for 15 minutes before serving. This helps the dish set and makes serving easier.
