Ingredients
Scale
Turkey Roast
- 1 Costco herb-seasoned turkey breast roast (about 2 to 3 pounds)
- 1 tablespoon olive oil (divided)
- 1 tablespoon unsalted butter (melted)
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried rosemary
- 1/2 teaspoon dried parsley
- 1/4 teaspoon black pepper
- 1/2 teaspoon kosher salt (adjust based on seasoning on turkey)
Vegetables
- 1 cup baby potatoes (halved)
- 1 cup baby carrots
- 1 small yellow onion (cut into wedges)
Other
- 1 cup low-sodium chicken broth
Instructions
- Preheat and Prepare Dish: Preheat your oven to 375°F (190°C). Lightly grease a 9 x 13-inch baking dish or roasting pan to ensure the turkey and vegetables do not stick during cooking.
- Prepare Vegetables: Place the baby potatoes, baby carrots, and yellow onion wedges at the bottom of the baking dish. Drizzle them with half of the olive oil (about 1/2 tablespoon) and toss gently to coat evenly.
- Season the Turkey: Pat the Costco herb turkey breast dry with paper towels to remove excess moisture. In a small bowl, combine the remaining olive oil, melted butter, garlic powder, onion powder, thyme, rosemary, parsley, black pepper, and kosher salt. Rub this herb mixture uniformly over the entire surface of the turkey breast.
- Assemble for Baking: Place the seasoned turkey breast on top of the prepared vegetables in the baking dish. Pour the low-sodium chicken broth around the vegetables, ensuring not to wash off the seasoning from the turkey.
- Bake Covered: Cover the baking dish loosely with aluminum foil to retain moisture and bake in the preheated oven for 45 minutes.
- Finish Baking Uncovered: Remove the foil and continue baking for an additional 20 to 30 minutes, or until a meat thermometer inserted into the thickest part of the turkey reads 165°F (74°C). This step helps to brown and crisp the turkey exterior.
- Rest and Serve: Remove the turkey from the oven and let it rest for 10 minutes to allow juices to redistribute. Slice and serve the turkey breast with the roasted vegetables and spoon the flavorful pan juices over the top for added moisture and taste.
Notes
- Since Costco’s turkey breast may already be seasoned, taste the pan juices before adding any extra salt to avoid oversalting.
- For extra crispy edges on the turkey and vegetables, broil the dish for 2 to 3 minutes after removing the foil in the final baking stage.
