Description

These Delicious Cherry Pie Bites are perfect mini treats featuring flaky pie crusts filled with a sweet and thickened cherry filling. Quick to assemble and bake, they make an ideal dessert or snack for gatherings, combining the classic flavors of cherry pie in a convenient, bite-sized portion.

Ingredients

Scale

Pie Crust

  • 1 package refrigerated pie crusts

Cherry Filling

  • 1 can cherry pie filling (about 21 oz)
  • 1 tablespoon cornstarch
  • 1 tablespoon water

Topping (optional)

  • 1 tablespoon sugar

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C). Lightly grease a mini muffin tin or line it with mini muffin liners to prevent sticking.
  2. Prepare Pie Crust Circles: Unroll the refrigerated pie crusts and cut them into approximately 2-inch diameter circles using a cookie cutter or a glass.
  3. Thicken Cherry Filling: In a small saucepan, combine the cherry pie filling, cornstarch, and water. Heat the mixture over medium heat while stirring constantly until it thickens, about 3-4 minutes. Remove from heat and let it cool slightly.
  4. Form Pie Bites: Press each pie crust circle gently into the cups of the mini muffin tin, forming small crust cups.
  5. Fill Pie Crusts: Spoon a small amount of the thickened cherry filling into each crust cup, filling them generously but not overflowing.
  6. Bake: Place the mini muffin tin in the preheated oven and bake for 15–18 minutes, or until the crusts are golden brown and the filling is bubbly.
  7. Cool and Garnish: Remove the pie bites from the oven and, if desired, sprinkle the tops with sugar. Allow them to cool for a few minutes before serving.

Notes

  • Using mini muffin liners can make removal easier and reduce cleanup.
  • The optional sugar topping adds a nice crunch and sparkle but can be omitted for less sweetness.
  • Ensure the cherry filling thickens properly to prevent soggy crusts.
  • These pie bites are best served warm but taste great at room temperature as well.
  • Store any leftovers in an airtight container at room temperature for up to 2 days or refrigerate for longer freshness.
