Ingredients
Scale
Vegetables
- 1 kg (about 2.2 lbs) ripe tomatoes, chopped
- 2 medium bell peppers, diced (any color)
- 1 large onion, finely chopped
- 4 cloves garlic, minced
Herbs and Spices
- 1/2 cup fresh basil, chopped
- 1 teaspoon dried oregano
- Salt, to taste
- Black pepper, to taste
Oils
- 2 tablespoons olive oil
Instructions
- Gather Ingredients. Collect all fresh vegetables, herbs, and seasonings you will need to prepare the sauce.
- Prepare Vegetables. Wash the tomatoes and bell peppers thoroughly. Chop the tomatoes, dice the bell peppers, finely chop the onion, and mince the garlic cloves.
- Sauté Onions and Garlic. Heat 2 tablespoons of olive oil in a large skillet or saucepan over medium heat. Add the finely chopped onions and cook until translucent, about 5 minutes. Then add the minced garlic and sauté for another 1-2 minutes until fragrant.
- Add Bell Peppers and Tomatoes. Stir in the diced bell peppers and cook for 3-4 minutes. Then add the chopped tomatoes along with the dried oregano, salt, and black pepper. Mix well to combine.
- Simmer the Sauce. Reduce the heat to low and let the sauce simmer uncovered for 20 to 30 minutes, stirring occasionally to prevent sticking. This will allow the flavors to meld and the sauce to thicken.
- Blend for Smoothness (Optional). If a smooth sauce texture is preferred, carefully transfer the sauce to a blender or use an immersion blender to puree it until smooth. Return the sauce to the pan and simmer for an additional 5 minutes to deepen the flavors.

- Adjust the seasoning and herbs according to your taste preferences.
