Description

This Vegan German Potato Soup is a comforting, hearty, and creamy plant-based delight that brings traditional flavors into a dairy-free, healthy version. Packed with tender potatoes, aromatic herbs, and a medley of vegetables, this soup is perfect for a cozy meal that satisfies and nourishes without compromising on taste.

Ingredients

Scale

Vegetables and Aromatics

  • 1 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 3 large potatoes, peeled and diced
  • 2 carrots, sliced
  • 2 celery stalks, chopped

Liquids

  • 2 tablespoons olive oil
  • 4 cups vegetable broth
  • 1 cup unsweetened plant-based milk

Seasonings and Others

  • 1 teaspoon dried marjoram
  • 1/2 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Sauté Vegetables: Heat olive oil in a large pot over medium heat. Add the diced onion and sauté for 4 to 5 minutes until softened and translucent.
  2. Add Aromatics: Stir in the minced garlic, sliced carrots, and chopped celery. Cook for another 2 to 3 minutes to develop flavor and soften the vegetables.
  3. Add Potatoes and Broth: Add the diced potatoes, vegetable broth, dried marjoram, dried thyme, salt, and black pepper. Bring the mixture to a boil.
  4. Simmer Soup: Reduce the heat to low and let the soup simmer for about 20 minutes, or until the potatoes are tender and easily pierced with a fork.
  5. Blend for Creaminess: Use a potato masher or an immersion blender to partially mash or blend the soup, creating a creamy texture while leaving some chunks for heartiness.
  6. Add Final Ingredients: Stir in the plant-based milk, Dijon mustard, and apple cider vinegar. Simmer the soup for an additional 5 minutes to combine flavors.
  7. Adjust and Garnish: Taste and adjust seasoning as needed. Garnish the soup with freshly chopped parsley before serving.

Notes

  • For an extra depth of smoky flavor, add a pinch of smoked paprika when sautéing the vegetables.
  • To make the soup heartier, consider stirring in plant-based sausage or bacon alternatives.
  • Adjust the soup’s thickness by adding more vegetable broth if a thinner consistency is desired.
