Ingredients
Scale
Vegetables and Aromatics
- 1 medium yellow onion, diced
- 2 cloves garlic, minced
- 3 large potatoes, peeled and diced
- 2 carrots, sliced
- 2 celery stalks, chopped
Liquids
- 2 tablespoons olive oil
- 4 cups vegetable broth
- 1 cup unsweetened plant-based milk
Seasonings and Others
- 1 teaspoon dried marjoram
- 1/2 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon Dijon mustard
- 1 tablespoon apple cider vinegar
- 2 tablespoons chopped fresh parsley
Instructions
- Sauté Vegetables: Heat olive oil in a large pot over medium heat. Add the diced onion and sauté for 4 to 5 minutes until softened and translucent.
- Add Aromatics: Stir in the minced garlic, sliced carrots, and chopped celery. Cook for another 2 to 3 minutes to develop flavor and soften the vegetables.
- Add Potatoes and Broth: Add the diced potatoes, vegetable broth, dried marjoram, dried thyme, salt, and black pepper. Bring the mixture to a boil.
- Simmer Soup: Reduce the heat to low and let the soup simmer for about 20 minutes, or until the potatoes are tender and easily pierced with a fork.
- Blend for Creaminess: Use a potato masher or an immersion blender to partially mash or blend the soup, creating a creamy texture while leaving some chunks for heartiness.
- Add Final Ingredients: Stir in the plant-based milk, Dijon mustard, and apple cider vinegar. Simmer the soup for an additional 5 minutes to combine flavors.
- Adjust and Garnish: Taste and adjust seasoning as needed. Garnish the soup with freshly chopped parsley before serving.
Notes
- For an extra depth of smoky flavor, add a pinch of smoked paprika when sautéing the vegetables.
- To make the soup heartier, consider stirring in plant-based sausage or bacon alternatives.
- Adjust the soup’s thickness by adding more vegetable broth if a thinner consistency is desired.
