Description

This Ultimate Shrimp and Cheese Toast with Garlic Bread is a savory and irresistible appetizer perfect for parties or a delicious snack. Featuring tender shrimp sautéed with garlic and red pepper flakes, combined with creamy mayonnaise, melted mozzarella, and Parmesan cheese atop garlic buttered bread, it’s a harmonious blend of flavors and textures that will satisfy seafood lovers and cheese enthusiasts alike.

Ingredients

Scale

Shrimp Mixture

  • 1 pound large shrimp, peeled, deveined, and chopped
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced (divided)
  • ¼ teaspoon red pepper flakes (optional)

Garlic Butter

  • 4 tablespoons unsalted butter, softened
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon lemon zest
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Cheese and Assembly

  • ½ cup mayonnaise
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 1 French baguette or Italian loaf, sliced lengthwise or into thick slices

Instructions

  1. Prepare Shrimp: Preheat your oven to 400°F (200°C). Heat olive oil in a skillet over medium heat. Add the chopped shrimp and cook for 2–3 minutes until they turn pink and opaque. Stir in 1 clove of minced garlic and red pepper flakes, if using, and sauté for another 30 seconds. Remove from heat and allow to cool slightly.
  2. Make Garlic Butter: In a bowl, combine softened butter with remaining garlic, fresh parsley, lemon zest, salt, and black pepper. Mix well to create a flavorful garlic butter spread.
  3. Prepare Bread and Topping: Spread the garlic butter evenly over each slice of the bread. In another bowl, mix together mayonnaise, shredded mozzarella, grated Parmesan, and the cooked shrimp until thoroughly combined. Spoon the shrimp and cheese mixture generously over the garlic-buttered bread slices.
  4. Bake: Arrange the loaded bread slices on a baking sheet. Bake in the preheated oven for 10–12 minutes until the cheese is melted and bubbly.
  5. Broil for Color: For a beautiful golden top, broil the toasts for an additional 1–2 minutes, watching closely to avoid burning.
  6. Serve: Remove from the oven, let cool slightly, then slice and serve warm as a delicious appetizer or snack.

Notes

  • You can prepare the shrimp mixture ahead of time and store it in the refrigerator for up to one day.
  • For added freshness and flavor, sprinkle chopped green onions or drizzle a squeeze of lemon juice over the toasts just before serving.
  • This recipe works wonderfully as a party appetizer when cut into smaller, bite-sized pieces.
