  • 2 cups cooked chicken breast (shredded or chopped)
  • 1/2 cup plain Greek yogurt

  • 1 clove garlic (minced)
  • 1/2 teaspoon dried dill or 1 teaspoon fresh dill (chopped)
  • 1/2 cucumber (grated and excess water squeezed out)
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons red onion (finely chopped)
  • 2 tablespoons fresh parsley (chopped)
  • Optional: crumbled feta cheese or kalamata olives for garnish

Instructions

  1. In a medium bowl, whisk together the Greek yogurt, olive oil, lemon juice, minced garlic, dill, salt, and pepper until well combined.
  2. Stir in the grated cucumber, red onion, and parsley.
  3. Add the cooked chicken and mix until evenly coated with the tzatziki dressing.
  4. Taste and adjust seasoning as needed.
  5. Chill for at least 30 minutes before serving to allow flavors to meld.
  6. Serve on its own, in a lettuce wrap, pita, or over a bed of greens.
