For the Salad:
- 2 cups cooked chicken breast (shredded or chopped)
- 1/2 cup plain Greek yogurt
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- 1/2 cup finely diced cucumber (peeled and seeded)
- 1 garlic clove (minced)
- 1 tablespoon chopped fresh dill
- 1 tablespoon chopped fresh parsley
- 1/4 cup red onion (finely diced)
- Salt and black pepper to taste

Instructions
- In a medium bowl, whisk together the Greek yogurt, olive oil, lemon juice, garlic, dill, parsley, salt, and pepper until well combined. Fold in the cucumber and red onion.
- Add the cooked chicken and mix until evenly coated with the dressing. Taste and adjust seasoning if needed.
- Chill for at least 15 minutes before serving to let the flavors meld. Serve on its own, in pita bread, lettuce wraps, or over greens.

- You can use rotisserie chicken for convenience.
