- 1 teaspoon vanilla extract
- ½ cup toasted shredded coconut
- ½ cup chopped macadamia nuts
- ½ cup lime curd (plus extra for topping, optional)
- zest of 1 lime
Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Prepare the dough: In a medium bowl, whisk together the flour, baking soda, and salt. In a large mixing bowl, cream the butter, sugars, then beat in the egg, vanilla, and lime zest. Stir in the flour mixture, fold in coconut and macadamia nuts.
- Shape and bake: Scoop dough onto baking sheet, make an indentation, fill with lime curd. Bake for 10–12 minutes until golden. Cool before serving.
