Chili:

  • 2 tablespoons olive oil
  • 1 large yellow onion (diced)
  • 4 cloves garlic (minced)
  • 2 pounds ground beef (or a mix of beef and pork)
  • 1 (6 oz) can tomato paste
  • 1 (28 oz) can crushed tomatoes
  • 1 (15 oz) can diced tomatoes
  • 1 (15 oz) can kidney beans (drained and rinsed)
  • 1 (15 oz) can black beans (drained and rinsed)
  • 1 cup beef broth
  • 1 tablespoon chili powder
  • 2 teaspoons ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • ½ teaspoon cayenne pepper (optional)
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Optional Toppings:

  • shredded cheese
  • sour cream
  • diced onion
  • chopped cilantro

Instructions

  1. Heat the Olive Oil: In a large pot or Dutch oven, heat olive oil over medium heat.
  2. Add diced onion and cook until soft. Stir in garlic and cook until fragrant.

  3. Cook the Beef: Add ground beef and cook until browned. Drain excess fat if needed.
  4. Add Ingredients: Stir in tomato paste, then add crushed tomatoes, diced tomatoes, beans, and broth.
  5. Season: Stir in chili powder, cumin, paprika, oregano, cayenne, salt, and pepper.
  6. Simmer: Bring to a boil, then simmer uncovered for 30–45 minutes.
  7. Adjust: Taste and adjust seasoning as needed.
  8. Serve: Serve hot with optional toppings.
