- 2 cups cooked rice (white, brown, or jasmine)
- 1 pound boneless skinless chicken breasts, cut into bite-sized pieces

Vegetables
- 1 cup broccoli florets
- 1 red bell pepper, thinly sliced
- 1/2 cup shredded carrots
- 1/2 cup diced onion
- 3 cloves garlic, minced
Sauce and Toppings
- 1/2 cup teriyaki sauce
- 1/4 cup low-sodium soy sauce
- 1 tablespoon honey or brown sugar
- 1 teaspoon sesame oil
- 1/2 cup shredded mozzarella or Monterey Jack cheese
- 1 tablespoon sesame seeds (optional)
- 2 tablespoons chopped green onions for garnish
Instructions
- Preheat and prepare baking dish: Preheat the oven to 375°F and lightly grease a 9×13-inch baking dish to prevent sticking.
- Cook the chicken: Heat vegetable oil in a large skillet over medium-high heat. Season the chicken pieces with salt and black pepper. Cook them for 5–6 minutes until golden brown and cooked through, then remove from heat.
- Make the sauce: In a small bowl, whisk together the teriyaki sauce, soy sauce, honey (or brown sugar), and sesame oil until well combined.
- Combine casserole ingredients: In the prepared baking dish, mix together the cooked rice, cooked chicken, broccoli florets, sliced red bell pepper, shredded carrots, diced onion, and minced garlic.
- Add sauce and cheese: Pour the teriyaki sauce mixture evenly over the ingredients in the baking dish and gently stir to combine everything. Then sprinkle shredded cheese evenly on top.
- Bake covered: Cover the baking dish with foil and bake for 20 minutes to allow flavors to meld and vegetables to cook through.
- Bake uncovered: Remove the foil and bake for an additional 5–10 minutes until the cheese melts and becomes bubbly and slightly golden on top.
- Garnish and serve: Remove from oven and garnish with sesame seeds and chopped green onions. Serve hot and enjoy!

- For extra flavor, marinate the chicken in 1/4 cup teriyaki sauce for 30 minutes before cooking.
- You can substitute the rice with cauliflower rice for a low-carb version.
