  • 1 cup broccoli florets
  • 1 red bell pepper, thinly sliced

Sauce and Toppings

  • 1/2 cup teriyaki sauce
  • 1/4 cup low-sodium soy sauce
  • 1 tablespoon honey or brown sugar
  • 1 teaspoon sesame oil
  • 1/2 cup shredded mozzarella or Monterey Jack cheese
  • 1 tablespoon sesame seeds (optional)
  • 2 tablespoons chopped green onions for garnish


Instructions

  1. Preheat and prepare baking dish: Preheat the oven to 375°F and lightly grease a 9×13-inch baking dish to prevent sticking.
  2. Cook the chicken: Heat vegetable oil in a large skillet over medium-high heat. Season the chicken pieces with salt and black pepper. Cook them for 5–6 minutes until golden brown and cooked through, then remove from heat.
  3. Make the sauce: In a small bowl, whisk together the teriyaki sauce, soy sauce, honey (or brown sugar), and sesame oil until well combined.
  4. Combine casserole ingredients: In the prepared baking dish, mix together the cooked rice, cooked chicken, broccoli florets, sliced red bell pepper, shredded carrots, diced onion, and minced garlic.
  5. Add sauce and cheese: Pour the teriyaki sauce mixture evenly over the ingredients in the baking dish and gently stir to combine everything. Then sprinkle shredded cheese evenly on top.
  6. Bake covered: Cover the baking dish with foil and bake for 20 minutes to allow flavors to meld and vegetables to cook through.
  7. Bake uncovered: Remove the foil and bake for an additional 5–10 minutes until the cheese melts and becomes bubbly and slightly golden on top.
