  • 2 medium sweet potatoes, peeled and diced

Instructions

  1. Preheat the oven: Preheat the oven to 375°F (190°C).
  2. Cook the meat: In a large skillet, heat olive oil and sauté onion and garlic. Add ground turkey (or beef) and cook until browned. Season with chili powder, cumin, smoked paprika, salt, and pepper.
  3. Add remaining ingredients: Mix in black beans, diced tomatoes, corn, and sweet potatoes. Let simmer for 5–7 minutes.
  4. Bake: Transfer mixture to a baking dish, cover with foil, and bake for 25–30 minutes until sweet potatoes are tender.
  5. Finish: Remove foil, sprinkle with cheese, and bake for an additional 5–10 minutes until cheese melts. Garnish with cilantro and serve.
