Description

Indulge in these delightful Strawberry Shortcake Truffles that are perfect for any sweet craving. These no-bake treats feature a creamy strawberry-infused center coated in white chocolate and a crunchy cookie-strawberry shell.

Ingredients

Scale

Crust:

  • 1 box (10 ounces) vanilla wafer cookies or shortbread cookies, finely crushed
  • 1 1/2 cups freeze-dried strawberries, crushed

Filling:

  • 8 ounces cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract

Coating:

  • 12 ounces white chocolate chips or melting wafers
  • Extra crushed cookies and strawberries for coating

Instructions

  1. Mix Ingredients: In a large bowl, combine crushed cookies, crushed strawberries, cream cheese, powdered sugar, and vanilla. Mix until a thick dough forms.
  2. Shape Truffles: Roll the mixture into 1-inch balls and place on a parchment-lined baking sheet. Freeze for 20–30 minutes until firm.
  3. Coat Truffles: Melt white chocolate in a microwave-safe bowl in 30-second intervals. Dip each chilled truffle into the melted chocolate, allowing excess to drip off. Roll in additional crushed cookies and strawberries for coating or sprinkle on top.
  4. Chill and Serve: Place coated truffles back on the baking sheet and refrigerate until set. Serve chilled.

Notes

  • Truffles can be made ahead and stored in the refrigerator for up to 5 days.
  • For extra sweetness, drizzle with melted white chocolate before serving.
