These Strawberry Bars are a delightful fruity dessert perfect for any occasion. A buttery crust topped with a sweet strawberry filling and oat crumble, these bars are a crowd-pleaser!

Crust:
- 1 cup unsalted butter (softened)
- ¾ cup granulated sugar
- ¼ cup brown sugar (packed)
- 1 teaspoon vanilla extract
- 2 ¼ cups all-purpose flour
- ½ teaspoon salt
Filling:
- 1 ½ cups strawberry jam or preserves
- 1 cup fresh strawberries (chopped)
- 1 tablespoon cornstarch
- juice of ½ lemon
Oat Topping:
- ½ cup old-fashioned oats
Instructions
- Preheat oven and prepare baking dish: Preheat oven to 350°F (175°C) and line a 9×13-inch baking dish with parchment paper.
- Prepare crust: Cream together butter, sugars, and vanilla. Mix in flour and salt to form a dough. Press into the baking dish.
- Make filling: Combine jam, strawberries, cornstarch, and lemon juice. Spread over the crust.
- Add oat topping: Mix reserved dough with oats and crumble over the strawberry layer.
- Bake: Bake for 35–40 minutes until golden and bubbly. Cool before slicing into bars.
Notes
- You can use raspberry or mixed berry preserves instead of strawberry.
- Bars can be made a day ahead and stored in the fridge.
- For a firmer bar, chill before slicing.
