Creamed Corn:
- 4 cups fresh or frozen corn kernels
- 1 tablespoon unsalted butter
- 1/2 cup finely chopped yellow onion
- 1 clove garlic, minced
- 1 cup heavy cream
- 1/2 cup whole milk
- 1 tablespoon all-purpose flour
- 2 teaspoons granulated sugar
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon smoked paprika (optional)
- 1/4 cup grated Parmesan cheese
- Chopped chives or parsley for garnish
Instructions
- In a large skillet over medium heat, melt the butter. Add the chopped onion and sauté until softened. Stir in garlic and cook for 30 seconds.
- Sprinkle flour over the onions and stir for 1 minute to form a roux.
- Slowly whisk in the heavy cream and milk, stirring until smooth and slightly thickened.
- Add corn, sugar, salt, pepper, and paprika. Simmer for 8–10 minutes until corn is tender and sauce is creamy.
- Stir in Parmesan cheese and cook for another 1–2 minutes until melted and combined.
- Remove from heat, garnish with chives or parsley, and serve warm.

- You can use canned corn, but drain well before adding.
