This delightful Spinach & Cheese Omelette is a quick and easy breakfast option that is packed with flavor and nutrients. The creamy eggs, fresh spinach, and gooey cheese come together perfectly in this satisfying dish.

Ingredients

Scale

Eggs Mixture:

  • 3 large eggs
  • 2 tablespoons milk
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Additional Ingredients:

  • 1 teaspoon butter or olive oil
  • 1/2 cup fresh spinach (chopped)
  • 1/4 cup shredded cheese (cheddar, mozzarella, or feta)
  • optional: chopped herbs or a pinch of red pepper flakes

Instructions

  1. Eggs Mixture: In a bowl, whisk together the eggs, milk, salt, and pepper until well blended.
  2. Cook Spinach: Heat the butter or oil in a nonstick skillet over medium heat. Add the chopped spinach and cook for 1–2 minutes until wilted.
  3. Cook Omelette: Pour the egg mixture into the skillet, cook until the edges start to set. Sprinkle cheese over one half, fold the other half over the cheese, and cook until the cheese melts.
  4. Serve: Slide the omelette onto a plate and serve warm.

Notes

  • For added flavor, sauté a little garlic or onion with the spinach.
  • You can use frozen spinach—just thaw and squeeze out excess water before adding.
  • Great with toast or fruit on the side.
