- 3 large eggs
- 2 tablespoons milk
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper

- 1 teaspoon butter or olive oil
- 1/2 cup fresh spinach (chopped)
- 1/4 cup shredded cheese (cheddar, mozzarella, or feta)

Instructions
- Eggs Mixture: In a bowl, whisk together the eggs, milk, salt, and pepper until well blended.
- Cook Spinach: Heat the butter or oil in a nonstick skillet over medium heat. Add the chopped spinach and cook for 1–2 minutes until wilted.
- Cook Omelette: Pour the egg mixture into the skillet, cook until the edges start to set. Sprinkle cheese over one half, fold the other half over the cheese, and cook until the cheese melts.
- Serve: Slide the omelette onto a plate and serve warm.

- For added flavor, sauté a little garlic or onion with the spinach.
- You can use frozen spinach—just thaw and squeeze out excess water before adding.
