Instructions
- Prepare the shrimp: Chop the fresh shrimp in a food processor until coarsely chopped, ensuring some texture remains for a nice bite.
- Sauté the vegetables: Heat avocado oil in a pan over medium heat. Add the finely chopped red bell pepper and sauté for about 3 minutes. Add the chopped garlic and sauté for another 1 minute until fragrant. Remove from heat and let cool.
- Mix the patty ingredients: In a large bowl, combine the chopped shrimp, cooled sautéed red bell pepper and garlic mixture, finely chopped red onion, cilantro, green onion, jalapeno, panko breadcrumbs, egg, mayonnaise, hot pepper sauce, lime juice, sugar, salt, and pepper. Mix thoroughly until well incorporated.
- Form patties: Shape the mixture into 4 to 6 equal-sized patties. Optionally, coat each patty with additional panko breadcrumbs for extra crispiness.
- Preheat the air fryer: Preheat your air fryer to 400°F (200°C). Lightly grease the air fryer basket to prevent sticking.
- Air fry the patties: Arrange the patties in a single layer in the basket. Air fry for about 10 minutes, flipping the patties halfway through the cooking time to ensure even cooking and crispiness.
