Description

Spicy Garlic Chili Noodles are a quick and flavorful dish perfect for a weeknight dinner. These noodles combine the boldness of garlic, the heat of chili paste and red pepper flakes, and the savory umami of soy and oyster sauces for an irresistible taste explosion. Ready in just 20 minutes, this recipe is easy to make and can be customized to your preferred spice level.

Ingredients

Scale

Noodles

  • 8 oz noodles (lo mein, ramen, or spaghetti)

Sauce and Seasoning

  • 3 tbsp vegetable oil
  • 6 cloves garlic, minced
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce (optional)
  • 1 tbsp chili paste or sriracha
  • 1 tsp red pepper flakes (adjust to heat preference)
  • 1 tsp sesame oil
  • 1 tsp sugar

Garnish

  • 2 green onions, sliced
  • Sesame seeds, for garnish

Instructions

  1. Cook noodles: Cook noodles according to the package directions until al dente. Drain them well and set aside to prevent sogginess.
  2. Sauté garlic: Heat vegetable oil in a large skillet or wok over medium heat. Add the minced garlic and sauté for about 30 seconds until it’s fragrant and just beginning to turn golden, being careful not to burn it.
  3. Combine sauces and spices: Stir in soy sauce, oyster sauce if using, chili paste or sriracha, red pepper flakes, sesame oil, and sugar. Mix well to create a spicy, savory sauce base.
  4. Toss noodles: Add the cooked noodles to the skillet and toss thoroughly so that every strand is evenly coated with the sauce mixture, ensuring maximum flavor.
  5. Garnish and serve: Remove from heat and immediately garnish with sliced green onions and a sprinkle of sesame seeds. Serve the noodles hot for the best taste experience.

Notes

  • Adjust the amount of red pepper flakes and chili paste to your preferred spice tolerance.
  • Oyster sauce is optional but adds a rich umami flavor; substitutes like hoisin sauce can also be used.
  • Use any type of noodles you prefer such as lo mein, ramen, or even spaghetti.
  • Garlic should be sautéed briefly to avoid bitterness.
  • For a protein boost, consider adding cooked chicken, shrimp, or tofu.
