- 1 tablespoon olive oil
Additional Ingredients:
- 1 cup uncooked long-grain white rice
- 1 (14.5-ounce) can diced tomatoes (with juices)
- 1½ cups shredded cheddar cheese
- 1½ cups beef broth
- Chopped parsley for garnish (optional)
Instructions
- Preheat the Oven: Preheat the oven to 350°F and lightly grease a 9×13-inch baking dish.
- Cook Ground Beef Mixture: In a skillet over medium heat, sauté onion and bell pepper in olive oil. Add ground beef, season with garlic powder, onion powder, salt, and pepper. Cook until browned, then drain excess grease.
- Layer Ingredients: In the baking dish, layer uncooked rice, half of the beef mixture, diced tomatoes, remaining beef mixture, and beef broth.
- Bake: Cover with foil and bake for 1 hour. Remove foil, top with cheddar cheese, and bake uncovered until melted and bubbly.
- Rest and Serve: Let the casserole rest for 5 minutes before serving. Garnish with parsley if desired.
