Chicken:
- 4 boneless, skinless chicken breasts
- Salt and pepper to taste
- 1/2 cup all-purpose flour
Sauce:
- 2 tablespoons olive oil
- 1 tablespoon butter
- 1 medium onion, sliced
- 2 cloves garlic, minced
- 1 1/2 cups chicken broth
- 1/2 cup heavy cream
- 1 teaspoon dried thyme
- 1/2 teaspoon paprika
- Fresh parsley, chopped, for garnish
Instructions
- Season and Dredge Chicken: Season chicken breasts with salt and pepper, then dredge them in flour, shaking off any excess.
- Cook Chicken: Heat olive oil and butter in a large skillet over medium-high heat. Add chicken and cook for 4-5 minutes per side until golden brown and cooked through. Remove chicken and set aside.
- Prepare Sauce: In the same skillet, add sliced onions and cook until softened, about 5 minutes. Add minced garlic and cook for 1 minute more. Pour in chicken broth, scraping up browned bits from the pan. Stir in heavy cream, thyme, and paprika. Simmer the sauce for 5-7 minutes until slightly thickened.
- Combine and Serve: Return chicken to the skillet and spoon sauce over the top. Cook for another 2 minutes to heat through. Garnish with fresh parsley before serving.
