Description

This Smashburger Quesadillas recipe combines juicy, seasoned ground beef with melty cheese and fresh veggies, all sandwiched between crispy flour tortillas. Ready in just 30 minutes, it’s a perfect, flavorful meal for a quick lunch or dinner that satisfies all your craving for cheesy, spicy goodness in every bite.

Ingredients

Scale

Beef Mixture

  • 1 lb ground beef
  • 2 tablespoons taco seasoning
  • 1 cup diced onions
  • 1/2 cup sliced jalapeños

Quesadilla Assembly

  • 4 flour tortillas
  • 2 cups shredded cheese (cheddar or Mexican blend recommended)
  • 1 cup diced tomatoes
  • Cooking oil, as needed for skillet

Instructions

  1. Heat the Skillet: Heat a bit of cooking oil in a skillet over medium-high heat to prepare for browning the ground beef.
  2. Cook the Ground Beef: Add the ground beef to the hot skillet and cook until browned, breaking it up as it cooks to ensure even browning.
  3. Season and Add Veggies: Stir in the taco seasoning, diced onions, and sliced jalapeños into the cooked beef mixture and cook for a couple of minutes to combine flavors.
  4. Assemble the Quesadilla: Place one flour tortilla in the skillet, then evenly spread a portion of the beef mixture across it, sprinkle with some diced tomatoes, and top with shredded cheese.
  5. Top and Cook: Place another tortilla on top and cook until the bottom tortilla is golden and crispy, then carefully flip the quesadilla and cook the other side until it’s equally golden and the cheese has melted.
  6. Repeat: Remove the cooked quesadilla from the skillet, and repeat this process with the remaining tortillas and beef filling.
  7. Serve: Slice each quesadilla into wedges and serve immediately with your favorite salsa or dipping sauce.

Notes

  • Use a non-stick skillet or lightly oil the pan to prevent sticking.
  • Adjust the amount of jalapeños to control the spice level.
  • Feel free to substitute beef with ground turkey or chicken for a lighter option.
  • Serve with sour cream or guacamole for extra creaminess.
  • To make it gluten-free, replace flour tortillas with gluten-free tortillas.
