For the Soup:

  • 1.5 pounds boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
  • 1 tablespoon fresh ginger, thinly sliced
  • 3 stalks lemongrass, trimmed and smashed
  • 3 kaffir lime leaves (or zest of 1 lime as substitute)
  • 4 cups chicken broth
  • 1 (13.5 oz) can full-fat coconut milk
  • 1 cup mushrooms, sliced (shiitake or white button)
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons fish sauce
  • 1 tablespoon brown sugar
  • 1–2 tablespoons Thai red curry paste (adjust to spice preference)
  • Juice of 2 limes
  • 1–2 Thai chilis, sliced (optional)
  • Fresh cilantro and green onions for garnish

Instructions

  1. Add the chicken, ginger, lemongrass, kaffir lime leaves, chicken broth, onion, garlic, and mushrooms to a slow cooker. Cover and cook on low for 6–7 hours or on high for 3–4 hours, until the chicken is tender.
  2. Remove the lemongrass and lime leaves. Stir in the coconut milk, fish sauce, brown sugar, red curry paste, and lime juice.
  3. Add Thai chilis if using. Cook for another 15–20 minutes on high, until heated through and flavors are well combined.
  4. Taste and adjust seasoning with more lime juice, fish sauce, or sugar if needed. Serve hot, garnished with chopped cilantro and green onions.

Notes

  • For a vegetarian version, substitute tofu for chicken and use vegetable broth.
  • You can also add baby corn or bamboo shoots for extra texture.
  • Kaffir lime leaves and lemongrass can usually be found in Asian markets or the international aisle of grocery stores.
