- 1 1/2 pounds beef steak (sirloin or chuck), cut into 1-inch strips
- 1 teaspoon salt

- 1 teaspoon smoked paprika (optional)
Vegetables and Liquids
- 4 medium red or Yukon gold potatoes, cut into chunks
- 2 cups baby carrots
- 3 ears corn, cut into thirds or 2 cups frozen corn kernels
- 1 cup beef broth
- 1 tablespoon Worcestershire sauce
Additional Ingredients
- 2 tablespoons olive oil or butter
- 1/4 cup chopped fresh parsley for garnish (optional)
Instructions
- Season the steak: In a bowl, season the beef steak strips evenly with salt, black pepper, garlic powder, onion powder, and smoked paprika if using, ensuring all pieces are well coated.
- Sear the steak: Heat olive oil or butter in a skillet over medium-high heat. Add the steak strips and sear for 2–3 minutes on each side until browned but not fully cooked, to lock in flavor.
- Prepare slow cooker base: Place the potato chunks and baby carrots at the bottom of the slow cooker, creating a sturdy base for even cooking.
- Layer steak: Add the seared steak strips on top of the potatoes and carrots in the slow cooker.
- Add liquids: Pour the beef broth and Worcestershire sauce evenly over all ingredients inside the slow cooker.
- Cook low and slow: Cover the slow cooker and cook on low for 6–7 hours or on high for 3–4 hours, until the potatoes and carrots are tender and the steak is thoroughly cooked.
- Add corn: About 30 minutes before serving, add the corn pieces to the slow cooker and stir gently to combine, then continue cooking until the corn is tender.
- Adjust seasoning and garnish: Taste the dish and adjust seasoning as needed, then garnish with chopped fresh parsley before serving.
Notes
- You can add onions or bell peppers for extra flavor and variety.
- Frozen corn works just as well as fresh corn and is convenient.
- For a thicker sauce, remove some cooking liquid, mix with 1 tablespoon cornstarch, and stir back into the slow cooker during the last 15 minutes of cooking.
