Ingredients
Scale
Meat and Dairy
- 1 1/2 pounds sirloin steak, cut into bite-sized pieces
- 1 1/2 cups shredded sharp cheddar cheese
- 1/2 cup sour cream
- Olive oil for searing
Vegetables
- 2 pounds russet potatoes, peeled and diced
- 1 medium yellow onion, chopped
- 2 cloves garlic, minced
Liquids and Seasonings
- 1 cup beef broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons chopped fresh parsley
Instructions
- Sear the Steak: Heat a skillet over medium-high heat and add a drizzle of olive oil. Sear the steak pieces until browned on all sides, about 2–3 minutes, ensuring they are browned but not fully cooked. Transfer the steak to the slow cooker.
- Add Vegetables and Seasonings: Add the diced potatoes, chopped onion, minced garlic, beef broth, Worcestershire sauce, smoked paprika, salt, and black pepper to the slow cooker with the seared steak. Stir gently to combine all ingredients evenly.
- Cook: Cover the slow cooker and cook on low for 6–7 hours or on high for 3–4 hours until the potatoes are tender and the steak is fully cooked.
- Add Cheese and Sour Cream: Once cooking is complete, stir in the sour cream and 1 cup of shredded cheddar cheese until the mixture becomes creamy and the cheese melts thoroughly.
- Top with Cheese and Melt: Sprinkle the remaining 1/2 cup of cheese on top of the casserole. Cover the slow cooker again and let the cheese melt for 5–10 minutes.
- Garnish and Serve: Garnish the casserole with chopped fresh parsley. Serve warm and enjoy your comforting slow cooker steak and cheddar potato casserole.
Notes
- For extra flavor, add cooked crumbled bacon or a handful of chopped green onions at the end.
- You can substitute Greek yogurt for sour cream if you prefer a tangier and lighter option.
