Ingredients
Scale
Meat
- 1 lb ground beef
Vegetables and Beans
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (10 oz) corn kernels, drained
- 1 lb frozen hashbrowns
Dairy
- 1 cup shredded cheddar cheese
- 1/2 cup milk
Seasonings
- 1 packet ranch seasoning mix
- Salt and pepper to taste
Instructions
- Brown the Beef: In a skillet over medium heat, cook the ground beef until fully browned, breaking it apart as it cooks. Once cooked through, drain any excess fat to keep the casserole from being greasy.
- Assemble in Slow Cooker: Transfer the browned ground beef to your slow cooker. Add the drained kidney beans, black beans, corn, frozen hashbrowns, ranch seasoning mix, milk, salt, and pepper. Stir everything together thoroughly to combine all ingredients evenly.
- Cook: Cover the slow cooker with its lid and cook the mixture on low for 4 to 5 hours or on high for 2 to 3 hours. This slow cooking allows the flavors to meld and the hashbrowns to soften perfectly.
- Add Cheese: Approximately 30 minutes before serving, sprinkle the shredded cheddar cheese evenly over the top of the casserole. Cover the slow cooker again and let the cheese melt and become bubbly.
- Serve: Once the cheese is melted and bubbly, scoop portions of the casserole onto plates. Serve hot and enjoy the warm, satisfying flavors of this cowboy-inspired dish.
Notes
- For a spicier kick, add a diced jalapeno or a teaspoon of chili powder along with the ranch seasoning.
- You can substitute frozen hashbrowns with diced potatoes if preferred; adjust cooking time accordingly.
- To keep it lower in fat, use lean ground beef and reduced-fat cheese.
- This casserole can be prepared the night before—just assemble all ingredients except cheese, refrigerate overnight, then cook the next day.
- Serve with a side of fresh green salad or cornbread for a complete meal.
