Ingredients
Scale
Chicken and Broth
- 3 boneless, skinless chicken breasts
- 8 cups chicken broth
Vegetables and Beans
- 1 small yellow onion, chopped
- 3 teaspoons minced garlic
- 1 can (4 ounces) diced green chilies
- 2 cans (10.5 ounces each) Rotel diced tomatoes with green chilies, undrained
- 1 can (29 ounces) crushed tomatoes
- 1 can (15 ounces) black beans, rinsed and drained
Spices
- 1/2 teaspoon chili powder
- 2 teaspoons ground cumin
- 2 teaspoons taco seasoning
Instructions
- Prepare the slow cooker: Grease the inside of a 7-quart slow cooker to prevent sticking and ensure easy cleanup.
- Layer ingredients: Place the chicken breasts at the bottom of the slow cooker. Add the chopped onion, minced garlic, diced green chilies, Rotel tomatoes with green chilies (undrained), crushed tomatoes, black beans, chili powder, cumin, taco seasoning, and chicken broth over the chicken. Stir gently to combine the ingredients evenly.
- Slow cook the soup: Cover the slow cooker with its lid. Cook on low heat for 6 hours or on high heat for 4 hours to allow the chicken to cook thoroughly and the flavors to meld.
- Shred the chicken: Carefully remove the hot chicken breasts from the slow cooker and place them on a large plate or platter. Use two forks to shred the chicken into bite-sized pieces.
- Combine shredded chicken: Return the shredded chicken to the slow cooker and stir well to incorporate it evenly throughout the soup.
- Serve: Ladle the soup into bowls and top with your favorite garnishes such as shredded cheese, crunchy tortilla strips, and sour cream. Enjoy the warm, flavorful tortilla soup!
Notes
- For extra heat, add chopped jalapeños or a dash of hot sauce.
- Toppings like avocado slices, cilantro, or lime wedges complement the flavors well.
- You can substitute rotisserie chicken to reduce cooking time; add it in the last 30 minutes just to warm through.
- Leftovers store well in the fridge for up to 3 days or freezer for up to 2 months.
- Be sure to rinse and drain black beans to reduce sodium content and improve texture.
