Ingredients
Scale
Beef and Seasonings
- 3 lbs. beef chuck roast
- 1 tsp. onion powder
- 1 tsp. garlic powder
- 1 ½ tsp. salt
- ¼ tsp. pepper
- 1 Tbsp. brown sugar
- 2 Tbsp. Worcestershire sauce
- 1 white onion, sliced
- 1 cup barbecue sauce (Arby’s barbecue or any barbecue sauce)
Sandwich Assembly
- Hamburger buns
- Arby’s sauce (available at most grocery stores or substitute with barbecue sauce)
- Horsey sauce (available at most grocery stores or substitute with horseradish mayo)
- Cheddar cheese slices (or nacho cheese sauce or Cheez Whiz)
Instructions
- Prepare the Meat: Add the chuck roast to the slow cooker. Sprinkle onion powder, garlic powder, salt, pepper, and brown sugar evenly over the meat. Pour Worcestershire sauce on top to add depth of flavor.
- Add Onions and Sauce: Slice the white onion into rings and place them atop the roast. Pour the barbecue sauce over the onions and meat to infuse the beef with rich taste while cooking.
- Slow Cook: Cover and cook on low heat for 9 hours, allowing the beef to become tender and easily shreddable.
- Shred Beef and Prepare Juices: Once cooked, remove the beef onto a plate and shred it using two forks, discarding any excess fat. Drain all the cooking juices from the slow cooker except about half a cup, and optionally leave the cooked onions in the juices. Return the shredded beef to the slow cooker juices to keep it moist. If the sauce appears greasy, remove excess fat with a paper towel.
- Toast Buns: Toast the hamburger buns if desired to add slight crunch and warmth.
- Assemble Sandwiches: Place a generous portion of shredded beef and onions on the toasted buns. Top with cheddar cheese slices, then drizzle with Arby’s sauce and horsey sauce for authentic flavor.
- Serve and Enjoy: Serve immediately while warm and enjoy your hearty slow cooker beef and cheddar sandwiches.
Notes
- You can substitute Arby’s sauce and horsey sauce with other barbecue sauces or horseradish mayo if unavailable.
- To reduce fat, skim additional grease from the cooking liquid before combining with shredded beef.
- Cheese options can be swapped according to preference: use nacho cheese sauce or Cheez Whiz for a different cheesy texture.
- For quicker serving, you can also cook the roast on high for 4-5 hours but low and slow yields better tenderness.
- Leftover shredded beef can be refrigerated for up to 3 days or frozen for up to 3 months.
