Shrimp Mixture

- 2 slices white sandwich bread, crusts removed

- 1/2 cup vegetable oil for frying
Instructions
- Prepare the shrimp paste: Finely chop or pulse the raw shrimp in a food processor until it forms a paste with some texture remaining. Transfer the shrimp paste to a bowl.
- Mix the shrimp filling: Add the egg white, finely chopped green onions, grated ginger, minced garlic, soy sauce, sesame oil, salt, white pepper, and cornstarch to the shrimp paste. Mix thoroughly until all ingredients are well combined.
- Prepare the bread: Cut each slice of crustless white sandwich bread into triangles or rectangles depending on your preference.
- Assemble the toasts: Spread a thick, even layer of the shrimp mixture over one side of each bread piece. Sprinkle sesame seeds evenly over the shrimp layer, then gently press the seeds into the mixture to help them adhere.
- Heat the oil: In a skillet, heat 1/2 cup of vegetable oil over medium heat until hot but not smoking, suitable for shallow frying.
- Fry the shrimp toast: Carefully place the bread pieces shrimp-side down into the hot oil. Cook for 2 to 3 minutes until the shrimp topping turns golden and crisp. Then flip each piece and fry the bread side for an additional 1 to 2 minutes until golden brown.
- Drain and serve: Remove the fried shrimp toast from the skillet and place on paper towels to drain excess oil. Serve warm, optionally with sweet chili sauce or soy dipping sauce.

- For a lighter version, you can bake the shrimp toasts at 400°F for 12 to 15 minutes or air fry at 375°F for 8 to 10 minutes, flipping halfway through cooking.
