Ingredients
Scale
Shrimp and Vegetables
- 1 pound shrimp (peeled and deveined)
- 1 green bell pepper, sliced thin
- 1 red bell pepper, sliced thin
- 1 orange bell pepper, sliced thin
- 1 small white onion, sliced thin
Seasoning and Extras
- 1 ½ tablespoons extra virgin olive oil
- 1 teaspoon salt
- 1 teaspoon minced garlic
- ¼ teaspoon black pepper
- 2 teaspoons chili powder
- ½ teaspoon onion powder
- ½ teaspoon ground cumin
- ½ teaspoon smoked paprika
- Squeeze of ½ lime
- Fresh cilantro (optional)
- Flour tortillas (warmed)
Instructions
- Preheat the oven: Set your oven to 425 degrees Fahrenheit to prepare for roasting the shrimp and vegetables.
- Combine ingredients: In a large bowl, add the shrimp, sliced bell peppers, sliced onion, olive oil, salt, minced garlic, black pepper, chili powder, onion powder, cumin, and smoked paprika. Stir thoroughly to ensure everything is well coated with the seasoning.
- Prepare baking sheet: Drizzle olive oil on a baking sheet to prevent sticking, then spread the seasoned shrimp and vegetable mixture evenly across the sheet.
- Bake and broil: Place the baking sheet in the oven and bake for 10 minutes. After that, switch the oven to broil and cook for an additional 2 minutes or until the shrimp is cooked through and slightly charred. During this time, warm the flour tortillas in the oven as well.
- Finish and serve: Remove from oven, squeeze fresh lime juice over the shrimp fajitas, sprinkle with chopped cilantro if desired, and serve with warm flour tortillas.
Notes
- Be careful when broiling to avoid overcooking the shrimp; they cook quickly and become rubbery if left too long.
- Feel free to substitute flour tortillas with corn tortillas for a gluten-free option.
- You can add other toppings like avocado, sour cream, or cheese according to preference.
- If you prefer a spicier fajita, increase the chili powder or add a pinch of cayenne pepper to the seasoning mix.
