  • 1/4 cup cold water

  • 1/2 cup thinly sliced scallions (green parts only)
  • 2 tablespoons sesame oil
  • 1/4 cup vegetable oil (for frying)
  • Extra flour for rolling

Instructions

  1. Prepare the Dough: Combine flour and salt, then gradually add boiling water. Mix until the dough starts to come together. Add cold water and continue mixing until a rough dough forms.
  2. Knead and Rest: Knead the dough on a floured surface until smooth. Let it rest for 30 minutes.
  3. Shape and Fill: Divide the dough, roll into circles, brush with sesame oil, sprinkle scallions, roll into logs, coil into spirals, then flatten and roll into pancakes.
  4. Cook: Fry the pancakes in oil until golden brown and crispy on both sides.
  5. Serve: Slice and enjoy warm with a dipping sauce.
