Instructions
- Preheat Oven: Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Mix Dry Ingredients: In a medium bowl, whisk together flour, baking powder, and salt.
- Prepare Cheesecake Cookie Dough: In a large mixing bowl, beat cream cheese, butter, and sugar until light and fluffy. Add vanilla and egg, mix until fully combined. Gradually add the dry ingredients and mix until a soft dough forms.
- Bake Cookies: Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them 2 inches apart. Make an indentation in the center of each cookie. Bake for 10–12 minutes until edges are lightly golden.
- Make Caramel Topping: While cookies bake, melt caramels with heavy cream in a small saucepan over low heat, stirring until smooth.
- Assemble Cookies: Once cookies are out of the oven, fill the indentations with warm caramel and sprinkle with flaky sea salt. Let cool before serving.
