Ingredients
Yellow Squash:
3 medium yellow squash
Zucchini:
3 medium zucchini
Olive Oil:
2 tablespoons
Garlic Powder:
1 teaspoon
Dried Thyme:
1/2 teaspoon
Salt:
1/2 teaspoon
Black Pepper:
1/4 teaspoon
Parmesan Cheese (optional):
1/4 cup
Parsley:
chopped fresh parsley for garnish
Instructions
- Preheat the oven: Preheat the oven to 425°F (220°C) and line a large baking sheet with parchment paper.
- Slice the squash: Slice the squash and zucchini into 1/4-inch thick rounds.
- Toss with seasonings: In a large bowl, toss the squash with olive oil, garlic powder, thyme, salt, and pepper until evenly coated.
- Roast: Spread the slices on the baking sheet and roast for 20–25 minutes, flipping once halfway through, until tender and golden brown.
- Add Parmesan: If using Parmesan, sprinkle it over the squash during the last 5 minutes of baking.
- Garnish and serve: Remove from the oven, garnish with fresh parsley, and serve.

- Feel free to add sliced red onions or cherry tomatoes for extra color and flavor.
