Yellow Squash:

3 medium yellow squash

Zucchini:

3 medium zucchini

Olive Oil:

2 tablespoons

Garlic Powder:

1 teaspoon

Dried Thyme:

1/2 teaspoon

Salt:

1/2 teaspoon

Black Pepper:

1/4 teaspoon

Parmesan Cheese (optional):

1/4 cup

Parsley:

chopped fresh parsley for garnish


Instructions

  1. Preheat the oven: Preheat the oven to 425°F (220°C) and line a large baking sheet with parchment paper.
  2. Slice the squash: Slice the squash and zucchini into 1/4-inch thick rounds.
  3. Toss with seasonings: In a large bowl, toss the squash with olive oil, garlic powder, thyme, salt, and pepper until evenly coated.
  4. Roast: Spread the slices on the baking sheet and roast for 20–25 minutes, flipping once halfway through, until tender and golden brown.
  5. Add Parmesan: If using Parmesan, sprinkle it over the squash during the last 5 minutes of baking.
  6. Garnish and serve: Remove from the oven, garnish with fresh parsley, and serve.
