Description

This Roasted Potatoes with Baked Feta and Garlic recipe combines golden, tender baby potatoes with creamy, slightly browned feta cheese baked to perfection. Infused with garlic, oregano, and a hint of crushed red pepper flakes, it’s a delightful Mediterranean-inspired side dish that’s both flavorful and easy to prepare. Topped with fresh lemon juice and parsley, it offers a vibrant and comforting addition to any meal.

Ingredients

Scale

Main Ingredients

  • lbs baby potatoes, halved
  • 8 oz block of feta cheese
  • 4 tablespoons olive oil, divided
  • 5 garlic cloves, minced
  • 1 teaspoon dried oregano
  • ½ teaspoon crushed red pepper flakes (optional)
  • Salt and black pepper to taste
  • 1 tablespoon fresh lemon juice
  • Chopped fresh parsley for garnish

Instructions

  1. Preheat the Oven: Set your oven to 400°F (200°C) to prepare for roasting the potatoes and feta.
  2. Toss Potatoes with Seasoning: In a large bowl, combine the halved baby potatoes with 2 tablespoons of olive oil, minced garlic, dried oregano, crushed red pepper flakes if using, and salt and black pepper to taste. Mix well to coat evenly.
  3. Arrange in Baking Dish: Spread the seasoned potatoes in a single layer on a large baking sheet or oven-safe dish. Nestle the block of feta cheese in the center amongst the potatoes.
  4. Drizzle Remaining Oil: Pour the remaining 2 tablespoons of olive oil evenly over both the potatoes and the block of feta.
  5. Roast Until Tender: Place the baking dish in the oven and roast for 30 to 35 minutes, until the potatoes are golden brown and fork-tender and the feta has softened and slightly browned on top.
  6. Mash the Feta: Remove the dish from the oven and gently mash the feta with a spoon to create a creamy texture that blends with the potatoes.
  7. Add Lemon Juice and Toss: Drizzle fresh lemon juice over the potatoes and feta, then lightly toss everything together to combine the flavors.
  8. Garnish and Serve: Sprinkle with chopped fresh parsley and serve the dish warm as a delicious side.

Notes

  • For extra crispy potatoes, broil the dish for the last 2–3 minutes of cooking.
  • You can use crumbled feta instead of a block, but it may melt more quickly.
  • Add roasted cherry tomatoes or olives for an added Mediterranean twist.
