Roasted Apples:
- 2 medium apples (cored and sliced)

Salad:
- 2 cups cooked chicken breast (shredded or cubed)
- 1/3 cup chopped celery
- 1/4 cup dried cranberries
- 1/4 cup chopped toasted pecans or walnuts
- 1/4 cup plain Greek yogurt
- 2 tablespoons mayonnaise
- 1 tablespoon Dijon mustard
- 1 teaspoon apple cider vinegar
- Salt and black pepper to taste
- Optional mixed greens or lettuce cups for serving
Instructions
- Roast the Apples: Preheat oven to 400°F (200°C). Toss sliced apples with olive oil and cinnamon, then spread on a baking sheet. Roast for 15–18 minutes, flipping halfway through, until tender and lightly caramelized. Let cool slightly.
- Prepare the Salad: In a large bowl, combine the cooked chicken, celery, cranberries, nuts, and roasted apples.
- Make the Dressing: In a small bowl, whisk together Greek yogurt, mayonnaise, Dijon mustard, apple cider vinegar, salt, and pepper. Pour dressing over the chicken mixture and stir until everything is well coated.
- Chill and Serve: Chill for 15–30 minutes before serving. Serve on a bed of greens, in lettuce cups, or in a sandwich.
