Roasted Apples:

  • 2 medium apples (cored and sliced)
  • 1 tablespoon olive oil
  • 1/2 teaspoon ground cinnamon

Salad:

  • 2 cups cooked chicken breast (shredded or cubed)
  • 1/3 cup chopped celery
  • 1/4 cup dried cranberries
  • 1/4 cup chopped toasted pecans or walnuts
  • 1/4 cup plain Greek yogurt
  • 2 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 teaspoon apple cider vinegar
  • Salt and black pepper to taste
  • Optional mixed greens or lettuce cups for serving

Instructions

  1. Roast the Apples: Preheat oven to 400°F (200°C). Toss sliced apples with olive oil and cinnamon, then spread on a baking sheet. Roast for 15–18 minutes, flipping halfway through, until tender and lightly caramelized. Let cool slightly.
  2. Prepare the Salad: In a large bowl, combine the cooked chicken, celery, cranberries, nuts, and roasted apples.
  3. Make the Dressing: In a small bowl, whisk together Greek yogurt, mayonnaise, Dijon mustard, apple cider vinegar, salt, and pepper. Pour dressing over the chicken mixture and stir until everything is well coated.
  4. Chill and Serve: Chill for 15–30 minutes before serving. Serve on a bed of greens, in lettuce cups, or in a sandwich.
