Ground Beef/Turkey Mixture:
- 1 pound ground beef or ground turkey
- 1 tablespoon olive oil
Vegetable Mixture:
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 can (15 ounces) black beans, drained and rinsed
- 1 can (15 ounces) kidney beans, drained and rinsed
- 1 can (15 ounces) corn, drained
- 1 can (14.5 ounces) diced tomatoes
- 1 can (10 ounces) diced tomatoes with green chilies
Seasonings and Broth:
- 1 packet taco seasoning
- 1 packet ranch seasoning mix
- 2 cups beef or chicken broth
- Salt and black pepper to taste
Toppings:
- Shredded cheese
- Sour cream
- Tortilla chips
- Fresh cilantro
Instructions
- Cook the Meat and Vegetables: In a large pot, heat olive oil over medium heat. Add the ground beef and onion, cooking until browned and onion is softened. Stir in garlic.
- Add Ingredients: Add black beans, kidney beans, corn, diced tomatoes, tomatoes with green chilies, taco seasoning, ranch seasoning, and broth. Stir to combine.
- Simmer: Bring to a simmer, then reduce heat to low and cook uncovered for 20–25 minutes, stirring occasionally.
- Season and Serve: Season with salt and pepper. Serve hot with desired toppings.
Notes
- This soup tastes even better the next day as the flavors meld.
- You can use ground chicken for a lighter version or make it vegetarian by omitting the meat and using vegetable broth.
