Ground Beef/Turkey Mixture:

  • 1 pound ground beef or ground turkey
  • 1 tablespoon olive oil

Vegetable Mixture:

  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) kidney beans, drained and rinsed
  • 1 can (15 ounces) corn, drained
  • 1 can (14.5 ounces) diced tomatoes
  • 1 can (10 ounces) diced tomatoes with green chilies

Seasonings and Broth:

  • 1 packet taco seasoning
  • 1 packet ranch seasoning mix
  • 2 cups beef or chicken broth
  • Salt and black pepper to taste

Toppings:

  • Shredded cheese
  • Sour cream
  • Tortilla chips
  • Fresh cilantro

Instructions

  1. Cook the Meat and Vegetables: In a large pot, heat olive oil over medium heat. Add the ground beef and onion, cooking until browned and onion is softened. Stir in garlic.
  2. Add Ingredients: Add black beans, kidney beans, corn, diced tomatoes, tomatoes with green chilies, taco seasoning, ranch seasoning, and broth. Stir to combine.
  3. Simmer: Bring to a simmer, then reduce heat to low and cook uncovered for 20–25 minutes, stirring occasionally.
  4. Season and Serve: Season with salt and pepper. Serve hot with desired toppings.

Notes

  • This soup tastes even better the next day as the flavors meld.
  • You can use ground chicken for a lighter version or make it vegetarian by omitting the meat and using vegetable broth.
