- Mash Potatoes: Mash boiled potatoes in a large bowl until smooth and free of lumps, creating the base for the dough.
- Prepare Dough: Add all-purpose flour, grated cheddar and Parmesan cheeses, melted butter, salt, black pepper, and paprika to the mashed potatoes. Mix thoroughly until a soft, pliable dough forms.
- Shape Sticks: Lightly flour a surface and roll the dough to about 1/2 inch thickness. Cut the dough into 4-inch-long sticks for uniform frying.
- Coat Sticks: Dip each stick into the beaten egg to moisten, then roll and coat evenly in breadcrumbs to ensure a crispy crust.
- Fry Sticks: Heat oil in a frying pan over medium heat. Fry the coated sticks in batches, cooking each side until golden brown and crispy, about 3-4 minutes per batch.
- Drain and Serve: Remove the fried sticks with a slotted spoon and drain on paper towels to remove excess oil. Serve hot with your favorite dipping sauce.
