For the Pistachio Brigadeiros:
- 1 can (14 oz) sweetened condensed milk
- 2 tablespoons unsalted butter
- 1/2 cup finely ground pistachios
- 1/4 teaspoon salt
- 1/2 teaspoon vanilla extract
- Whole or crushed pistachios for garnish (optional)
Instructions
- Cooking the Mixture: In a nonstick saucepan over medium-low heat, combine the sweetened condensed milk, butter, finely ground pistachios, and salt. Cook while stirring constantly for 10–15 minutes until thickened.
- Adding Flavor: Stir in the vanilla extract and remove from heat. Let the mixture cool slightly, then refrigerate for at least 1 hour until firm.
- Forming Brigadeiros: Grease your hands, scoop out small portions, and roll into balls. Coat each brigadeiro with more ground or crushed pistachios. Place in mini paper cups for serving if desired.
Notes
- For a smoother texture, pulse the pistachios in a food processor until very fine.
