Fruit Salad:
- 3 fresh peaches, sliced
- 1 cup strawberries, hulled and halved
- 1 cup blueberries
- 1 cup raspberries
Dressing:
- 1 tablespoon honey
- 1 tablespoon fresh lime juice
- 1 teaspoon finely chopped fresh mint (optional)
Instructions
- In a large mixing bowl, combine the peaches, strawberries, blueberries, and raspberries.
- In a small bowl, whisk together the honey and lime juice until smooth.
- Drizzle the honey-lime mixture over the fruit and gently toss to combine.
- Sprinkle with fresh mint if desired. Serve immediately or chill for 30 minutes before serving for a colder salad.
Notes
- For extra sweetness, add 1/2 cup diced pineapple or mango.
- You can make this salad up to 2 hours ahead, but add the raspberries just before serving to prevent them from getting too soft.
