Description

Oven-Fried Feta Rolls with Chili Honey are a crispy, flavorful Mediterranean snack featuring crumbled feta cheese wrapped in delicate phyllo dough, baked to golden perfection and drizzled with a sweet and spicy chili-infused honey. These rolls make a perfect appetizer or light snack that’s easy to prepare and sure to impress.

Ingredients

Scale

Filling

  • 8 oz block feta cheese, crumbled
  • 2 tablespoons chopped fresh parsley
  • Black pepper, to taste
  • ½ teaspoon smoked paprika (optional)
  • Salt, to taste

Dough & Coating

  • 8 sheets phyllo dough, thawed
  • 2 tablespoons olive oil (plus more for brushing)
  • 2 tablespoons unsalted butter, melted

Chili Honey Drizzle

  • ¼ cup honey
  • 1 teaspoon red pepper flakes
  • 1 tablespoon olive oil
  • Pinch of salt

Instructions

  1. Preheat the oven and prepare baking sheet: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper to prevent sticking and make for easy cleanup.
  2. Prepare the feta filling: In a small bowl, crumble the feta cheese and mix with chopped fresh parsley, 1 tablespoon olive oil, black pepper, and smoked paprika (if using). Adjust salt to taste, keeping in mind feta is naturally salty.
  3. Prepare phyllo sheets: Lay one sheet of phyllo dough on a clean surface and brush lightly with olive oil. Place a second sheet on top and brush again to ensure both layers are well coated and pliable.
  4. Assemble the rolls: Spoon approximately 2 tablespoons of the feta mixture onto the bottom third of the layered phyllo dough. Fold the sides inward to enclose the filling, then roll tightly from the bottom up to create a neat roll. Repeat this process with the remaining sheets and filling to make 4 rolls total.
  5. Brush and bake: Place the rolls seam-side down on the prepared baking sheet. Brush each roll generously with melted butter to promote a golden, flaky crust. Bake in the preheated oven for 15–18 minutes, or until the rolls are crisp and golden brown.
  6. Prepare chili honey drizzle: While the rolls bake, combine the honey, red pepper flakes, a pinch of salt, and 1 tablespoon olive oil in a small saucepan. Warm gently over low heat for 2–3 minutes to infuse flavors, stirring occasionally.
  7. Serve: Remove the baked rolls from the oven and immediately drizzle with the warm chili honey. Serve right away for the best taste and texture.

Notes

  • Phyllo dough dries out quickly, so keep unused sheets covered with a damp towel while assembling the rolls.
  • For added freshness, serve with a dollop of Greek yogurt or alongside fresh cucumber slices.
  • Substitute fresh thyme or mint for parsley to vary the flavor profile.
