- Remaining orange JELLO powder from the package (minus 3 tbsp)
- 2 tbsp hot water
- 2 tsp vanilla extract
Frosting & Decoration
- 8 oz Cool Whip for icing
- Orange candy slices for decoration
- Orange gel icing color (optional)
Instructions
- Prepare Cake Pan: Preheat the oven to 350°F (175°C) and grease and line a 9-inch springform pan with parchment paper for easy removal.
- Make Cake Batter: In a mixing bowl, beat together flour, sugar, baking powder, and butter until crumbly. Then add egg whites, vanilla extract, sour cream, and milk, mixing until the batter is smooth. Stir in hot water and 3 tablespoons of orange JELLO powder until well combined.
- Bake Cake Layer: Pour the batter into the prepared springform pan and bake for 18 to 20 minutes. Allow the cake to cool completely on a cooling rack. Once cooled, level the cake layer to ensure an even surface.
- Infuse Cake with JELLO: Poke holes evenly all over the cooled cake using a skewer or fork. Dissolve 3 tablespoons of remaining orange JELLO powder in 2 tablespoons hot water and pour this mixture over the cake to infuse flavor and moisture.
- Prepare Ice Cream Mixtures: Beat the softened cream cheese and sugar until smooth. Gradually add milk, continuing to beat until incorporated. Gently fold in 12 ounces of Cool Whip to create a light, creamy base.
- Divide and Flavor Ice Cream Layers: Split the cream cheese mixture equally into two bowls. Mix the remaining orange JELLO powder into one half for the orange ice cream layer, and stir in vanilla extract into the other half for the vanilla ice cream layer.
- Assemble the Cake: Spread the vanilla ice cream mixture evenly over the cake layer. Then, layer the orange ice cream mixture on top. Smooth the layers and cover the cake tightly.
- Freeze Cake: Freeze the assembled cake for 6 to 8 hours or overnight to set completely.
- Frost and Decorate: Once the cake is firm, frost the top and sides with 8 ounces of Cool Whip. Decorate with orange candy slices and add orange gel icing color decorations if desired.
- Serve: Keep the cake chilled until serving. Slice and enjoy this refreshing and creamy Orange Creamsicle Ice Cream Cake.
Notes
- Ensure the cream cheese is softened to room temperature for easy mixing and smooth texture.
- Allow the cake layer to cool completely before adding ice cream layers to prevent melting.
- The holes poked in the cake help absorb the orange JELLO soak for enhanced flavor and moisture.
- For best results, freeze the cake overnight to allow flavors to meld and layers to set firmly.
- You can substitute orange gelatin with sugar-free JELLO for a lower sugar option.
- Use a springform pan to easily remove the cake without damaging the layers.
- Optional: Use orange gel icing colors for decorative piping or accents on the cake.
