Description

This One-Pot Chicken Parmesan Pasta is a quick and delicious Italian-American dish combining tender chicken, pasta, and rich marinara sauce cooked together in one pot for easy cleanup. Creamy mozzarella and Parmesan cheeses melt into the sauce, creating a comforting weeknight meal perfect for busy evenings.

Ingredients

Scale

Chicken and Seasonings

  • 1 lb boneless skinless chicken breast, cut into bite-sized pieces
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp Italian seasoning

Cooking Base

  • 1 tbsp olive oil
  • 3 cloves garlic, minced

Liquid and Sauce

  • 3 cups chicken broth
  • 1 (24 oz) jar marinara sauce

Pasta and Cheese

  • 12 oz uncooked penne or rotini pasta
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese

Garnish

  • 1/4 cup chopped fresh basil or parsley (optional)

Instructions

  1. Prepare Chicken: Heat olive oil in a large deep skillet or Dutch oven over medium-high heat. Season the chicken pieces with salt, pepper, and Italian seasoning. Add the chicken to the skillet and cook for 5–6 minutes, stirring occasionally, until browned but not fully cooked through.
  2. Add Garlic: Stir in the minced garlic and cook for 1 minute until fragrant, ensuring it does not burn.
  3. Combine Liquids and Pasta: Pour in the chicken broth, marinara sauce, and add the uncooked pasta. Stir everything together to mix thoroughly and bring the mixture to a boil.
  4. Simmer: Reduce the heat to medium-low and cover the skillet. Let it simmer for 12–15 minutes, stirring occasionally, until the pasta is tender and the chicken is cooked through.
  5. Add Cheese: Stir in the shredded mozzarella and half of the grated Parmesan cheese until melted and fully incorporated.
  6. Finalize Topping: Sprinkle the remaining Parmesan cheese on top, cover again, and let sit for 2–3 minutes to melt the cheese.
  7. Garnish and Serve: Garnish with chopped fresh basil or parsley if desired, and serve the pasta hot.

Notes

  • For a crispy topping, transfer the cooked pasta to a baking dish, sprinkle with extra cheese and breadcrumbs, and broil for 2–3 minutes until golden and bubbly.
  • Use rotisserie chicken instead of raw chicken for a quicker preparation time.
