Scale
Main Ingredients
- 1 lb (about 450 g) kielbasa sausage, sliced into rounds
- 1 lb (about 450 g) baby potatoes, halved
- 2 medium bell peppers (any color), sliced
- 1 medium onion, sliced
- 3 cloves garlic, minced
Seasonings and Oil
- 3 tablespoons olive oil
- 1 teaspoon paprika
- 1 teaspoon salt (or to taste)
- 1/2 teaspoon black pepper (or to taste)
Garnish
- Fresh parsley (optional)
Instructions
- Prepare the vegetables and sausage: Wash the baby potatoes thoroughly and cut them in half. Slice the bell peppers and onion into strips or rings, and mince the garlic cloves.
- Combine ingredients with seasonings: In a large mixing bowl, add the halved baby potatoes, sliced bell peppers, onion, and minced garlic. Drizzle the olive oil over the vegetables, then sprinkle with paprika, salt, and black pepper. Toss everything together to coat evenly with the oil and spices.
- Add the kielbasa: Add the sliced kielbasa sausage to the bowl and toss once again to mix all ingredients well.
- Arrange on baking sheet: Transfer the entire mixture to a baking sheet or roasting pan. Spread the ingredients out in an even layer to allow for proper roasting.
- Roast in the oven: Preheat the oven to 400°F (200°C) and roast the mixture for 25 to 30 minutes. Halfway through roasting, stir the contents to promote even cooking. Continue roasting until the baby potatoes are tender when pierced with a fork and the kielbasa is nicely browned.
- Serve and garnish: Once cooked, optionally garnish with freshly chopped parsley for a pop of color and freshness. Serve the dish warm.
Notes
- You can use any color of bell peppers based on preference or availability.
- For crispier potatoes, ensure they are spread in a single layer without overcrowding.
- Adjust salt and pepper to taste, especially if your kielbasa is already highly seasoned.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
- This recipe can be easily doubled or halved depending on your needs.
