For the Casserole:
- 4 boneless, skinless chicken breasts
- 1 cup long-grain white rice (uncooked)
- 1 (10.5 oz) can cream of mushroom soup
- 1 (10.5 oz) can cream of chicken soup
- 1 1/2 cups low-sodium chicken broth
- 1 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon black pepper
- 1 tablespoon butter (cut into small pieces)
- Chopped fresh parsley for garnish (optional)
Instructions
- Preheat and Prep: Preheat the oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish.
- Mix the Sauces: In the greased dish, whisk together the cream of mushroom soup, cream of chicken soup, chicken broth, onion powder, garlic powder, and black pepper until smooth.
- Add Rice and Chicken: Stir in the uncooked rice. Place the chicken breasts on top of the rice mixture and dot with butter pieces.
- Bake: Cover the dish tightly with aluminum foil. Bake for 1 hour and 30 minutes without removing the foil.
- Rest and Serve: Let the casserole rest for 5–10 minutes before uncovering and serving. Garnish with chopped parsley if desired.
