Description

These No-Bake Peanut Butter Buckeye Bars are a delicious and easy-to-make treat combining creamy peanut butter and sweet chocolate. Perfect for a quick dessert or snack, they require no oven time and come together in under an hour with simple ingredients to satisfy your sweet tooth.

Ingredients

Scale

Peanut Butter Layer

  • 1 1/2 cups peanut butter
  • 1/2 cup unsalted butter, melted
  • 2 cups powdered sugar
  • 1 tsp vanilla extract

Chocolate Layer

  • 2 cups semi-sweet chocolate chips
  • 2 tbsp butter (for chocolate layer)

Instructions

  1. Mix Peanut Butter Base: In a large mixing bowl, combine the peanut butter, melted unsalted butter, powdered sugar, and vanilla extract. Stir the mixture thoroughly until it is smooth and well-blended.
  2. Press Into Pan: Line an 8×8-inch baking dish with parchment paper. Press the peanut butter mixture evenly and firmly into the bottom of the prepared dish to form an even layer.
  3. Melt Chocolate: Place the semi-sweet chocolate chips and 2 tablespoons of butter in a microwave-safe bowl. Microwave in 30-second intervals, stirring after each interval until the chocolate mixture is completely melted and smooth.
  4. Pour Chocolate Layer: Pour the melted chocolate evenly over the pressed peanut butter layer. Use a spatula or the back of a spoon to spread the chocolate smoothly over the surface.
  5. Chill and Set: Refrigerate the baking dish for about 1 hour, or until the chocolate topping is firm. Once set, slice the dessert into bars and serve.

Notes

  • For easier slicing, warm the knife slightly before cutting to prevent cracking of the chocolate layer.
  • Store leftover bars in an airtight container in the refrigerator for up to one week.
  • Use natural peanut butter for a less sweet, more pronounced peanut flavor.
  • To make the bars vegan, substitute butter with coconut oil and ensure to use dairy-free chocolate chips.
