Instructions
- Make the strawberry cheesecake layer: Preheat the oven to 325°F. Line the bottom of a 9-inch springform pan with parchment paper and grease the sides. In a bowl, beat the cream cheese until smooth. Add the sugar and mix until combined. Beat in the eggs one at a time, then stir in vanilla and strawberry purée. Add food coloring if desired. Pour into the prepared pan and bake for 40–45 minutes, or until the center is set. Let cool completely, then chill in the refrigerator for at least 2 hours or overnight.
- Make the chocolate cake layer: Preheat oven to 350°F. Grease and flour a 9-inch round cake pan. In a bowl, whisk together the flour, sugar, cocoa, baking soda, and salt. Add water, oil, vinegar, and vanilla. Stir until smooth. Pour into the pan and bake for 30–35 minutes. Let cool completely.
- Make the vanilla cake layer: Preheat oven to 350°F. Grease and flour another 9-inch cake pan. In a separate bowl, whisk flour, baking powder, and salt. In a large bowl, cream butter and sugar until light and fluffy. Add eggs one at a time, then mix in vanilla. Alternate adding flour mixture and milk, beginning and ending with flour. Pour into the pan and bake for 30–35 minutes. Cool completely.
- Assemble the cake: Level all cake layers if needed. Place the chocolate cake layer on a serving plate. Spread a thin layer of whipped cream frosting, then gently place the strawberry cheesecake layer on top. Add another thin layer of frosting, then place the vanilla cake layer on top.
- Make the frosting: In a cold mixing bowl, beat the heavy cream with powdered sugar and vanilla until stiff peaks form. Frost the outside of the cake with whipped cream and smooth with an offset spatula.
- Garnish: Decorate with chocolate shavings, fresh strawberries, or a drizzle of strawberry or chocolate sauce if desired. Chill until ready to serve.
