Ingredients
Scale
Chicken
- 4 boneless skinless chicken breasts
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Sauce
- 2 tablespoons unsalted butter
- 8 ounces cremini or button mushrooms, sliced
- 3 cloves garlic, minced
- 1 cup heavy cream
- 3/4 cup grated Asiago cheese
- 1/2 cup chicken broth
- 1/2 teaspoon Italian seasoning
- 2 tablespoons chopped fresh parsley
Instructions
- Season and cook chicken: Season the chicken breasts evenly with salt and black pepper. Heat olive oil in a large skillet over medium heat. Add the chicken breasts and cook for 5 to 6 minutes on each side until they are golden brown and cooked through. Remove the cooked chicken from the skillet and set aside.
- Sauté mushrooms: In the same skillet, melt the unsalted butter. Add the sliced mushrooms and cook for about 5 minutes, stirring occasionally, until the mushrooms soften and start to brown.
- Add garlic: Stir in the minced garlic and cook for 1 minute until fragrant, being careful not to burn it.
- Deglaze and add liquids: Pour in the chicken broth and stir to loosen any browned bits stuck to the bottom of the pan. Then add the heavy cream and Italian seasoning. Bring the mixture to a gentle simmer.
- Melt Asiago cheese: Stir in the grated Asiago cheese gradually until fully melted and the sauce is smooth and creamy.
- Combine chicken and sauce: Return the cooked chicken breasts to the skillet. Spoon the mushroom Asiago sauce over the chicken and let it simmer together for 3 to 4 minutes until heated through and flavors meld.
- Garnish and serve: Sprinkle the chopped fresh parsley on top and serve the dish warm, ideally with pasta, mashed potatoes, or steamed vegetables.
Notes
- Freshly grated Asiago cheese melts best for a richer and creamier sauce.
- This dish pairs wonderfully with pasta, mashed potatoes, or steamed vegetables to complete the meal.
- Use cremini mushrooms for an earthier flavor or button mushrooms for a milder taste.
- Be sure not to overcook the chicken to keep it tender and juicy.
