Brownie Ingredients
- 1 box Fudge Brownie Mix (or use a homemade recipe)
- 2 large Eggs (room temperature)
- 1/3 cup Vegetable Oil (can substitute with melted butter)
- 1/4 cup Water (adjust as needed)
Frosting Ingredients
- 1 cup Unsalted Butter (softened)
- 4 cups Powdered Sugar (use less for a less sweet version)
- 2 teaspoons Vanilla Extract (can substitute with almond extract)
- 2 tablespoons Milk or Heavy Cream (adjust for consistency)
- 1 bottle Green Gel Food Coloring (use other colors as desired)
- Candy Eyeballs (for decoration)
Instructions
- Preparation: Preheat your oven to 350°F (175°C) and grease a 24-cup mini muffin pan thoroughly to prevent sticking.
- Mix Brownie Batter: In a large mixing bowl, gently combine the fudge brownie mix, 2 large room temperature eggs, 1/3 cup vegetable oil, and 1/4 cup water. Stir just until ingredients are blended to avoid overmixing, which can toughen the brownies.
- Fill Muffin Pan: Spoon the brownie batter into each muffin cup, filling about two-thirds full to allow room for rising without overflow.
- Bake: Place the muffin pan in the oven and bake for 12 to 15 minutes or until a toothpick inserted comes out with moist crumbs but no wet batter.
- Create Frosting Wells: While the brownies are still warm, gently press down in the center of each one using the back of a spoon or your finger to create a small well for the frosting.
- Cool Brownies: Allow the brownie bites to cool in the pan for 10 to 15 minutes, then transfer them carefully to a wire rack to cool completely.
- Make Frosting: In a mixing bowl, beat 1 cup softened unsalted butter until fluffy. Gradually add 4 cups powdered sugar and 2 teaspoons vanilla extract, continuing to mix until smooth and creamy.
- Add Color: Stir in green gel food coloring, adjusting the amount until you reach your desired vibrant green shade. Add 2 tablespoons milk or heavy cream as needed to achieve a spreadable consistency.
- Frost the Brownies: Using a piping bag, fill the wells of the cooled brownies with the green frosting, creating a generous dollop of “monster eye” surface.
- Decorate: Place a candy eyeball decoratively on top of each frosted brownie to complete the spooky monster eye appearance.
- Set and Serve: Let the frosted brownie bites set at room temperature for about 30 minutes before serving to allow the frosting to firm up slightly.
Notes
- You can substitute vegetable oil with melted butter for a richer brownie flavor.
- Adjust the powdered sugar in the frosting according to your preferred sweetness level.
- Use different gel food coloring colors to create a variety of monster eye themes.
- If you don’t have candy eyeballs, you can make eyes using white chocolate chips and food coloring markers.
- Store leftover brownie bites in an airtight container at room temperature for up to 3 days, or refrigerate for longer freshness.
