- 2 tablespoons vegetable oil or butter
- 1 medium yellow onion, finely sliced
- 2 cloves garlic, minced
- 1 1/2 cups chicken broth or vegetable broth

Instructions
- Prepare the Aromatics: Heat the oil or butter in a large deep skillet or Dutch oven over medium heat. Add the sliced onion and cook for 3 to 4 minutes until softened and lightly golden.
- Add Garlic: Stir in the minced garlic and cook for 30 seconds until fragrant, being careful not to burn it.
- Coat Potatoes: Add the potato chunks to the skillet, tossing gently to coat them well with the oil and aromatics.
- Season: Sprinkle the salt, black pepper, paprika, and dried thyme evenly over the potatoes and stir to distribute the seasonings.
- Add Liquids: Pour in the broth and soy sauce, making sure the liquid reaches about halfway up the potatoes.
- Simmer and Braise: Bring the mixture to a gentle simmer, then cover with a lid and reduce the heat to low. Let the potatoes braise for 25 to 30 minutes, stirring once or twice to prevent sticking and to help even cooking.
- Reduce Sauce: Remove the lid for the last 5 minutes of cooking to allow the sauce to reduce slightly and coat the potatoes beautifully.
- Garnish and Serve: Sprinkle chopped fresh parsley over the potatoes just before serving for a bright, fresh finish.
