Aromatics and Liquids

  • 2 tablespoons vegetable oil or butter
  • 1 medium yellow onion, finely sliced
  • 2 cloves garlic, minced
  • 1 1/2 cups chicken broth or vegetable broth

Instructions

  1. Prepare the Aromatics: Heat the oil or butter in a large deep skillet or Dutch oven over medium heat. Add the sliced onion and cook for 3 to 4 minutes until softened and lightly golden.
  2. Add Garlic: Stir in the minced garlic and cook for 30 seconds until fragrant, being careful not to burn it.
  3. Coat Potatoes: Add the potato chunks to the skillet, tossing gently to coat them well with the oil and aromatics.
  4. Season: Sprinkle the salt, black pepper, paprika, and dried thyme evenly over the potatoes and stir to distribute the seasonings.
  5. Add Liquids: Pour in the broth and soy sauce, making sure the liquid reaches about halfway up the potatoes.
  6. Simmer and Braise: Bring the mixture to a gentle simmer, then cover with a lid and reduce the heat to low. Let the potatoes braise for 25 to 30 minutes, stirring once or twice to prevent sticking and to help even cooking.
  7. Reduce Sauce: Remove the lid for the last 5 minutes of cooking to allow the sauce to reduce slightly and coat the potatoes beautifully.
