Pie Filling:
- 1 cup chopped pecans
- 2/3 cup light corn syrup
- 1/2 cup brown sugar
- 2 large eggs
- 2 tablespoons unsalted butter, melted
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Crust:
- 24 mini pie crusts (store-bought or homemade using refrigerated pie dough)
- Nonstick spray for muffin tin
Instructions
- Prepare the Crust: Preheat the oven to 350°F and lightly grease a mini muffin tin with nonstick spray. Roll out the pie dough and cut into rounds. Press each round into the muffin tin cups to form mini crusts.
- Make the Filling: In a medium bowl, whisk together corn syrup, brown sugar, eggs, melted butter, vanilla extract, and salt. Spoon chopped pecans into each crust, then pour the filling over the pecans.
- Bake: Bake for 20–25 minutes until set. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
- For added texture, toast the pecans before mixing.
- These can be made a day in advance and stored at room temperature in an airtight container.
- Serve as-is or with a dollop of whipped cream.
