Description

These Mini Pecan Pies are a delightful bite-sized Southern treat that combines the rich flavors of pecans, brown sugar, and butter in a mini pie crust. Perfect for parties, gatherings, or a sweet indulgence anytime!

Pie Filling:

  • 1 cup chopped pecans
  • 2/3 cup light corn syrup
  • 1/2 cup brown sugar
  • 2 large eggs
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Crust:

  • 24 mini pie crusts (store-bought or homemade using refrigerated pie dough)
  • Nonstick spray for muffin tin

Instructions

  1. Prepare the Crust: Preheat the oven to 350°F and lightly grease a mini muffin tin with nonstick spray. Roll out the pie dough and cut into rounds. Press each round into the muffin tin cups to form mini crusts.
  2. Make the Filling: In a medium bowl, whisk together corn syrup, brown sugar, eggs, melted butter, vanilla extract, and salt. Spoon chopped pecans into each crust, then pour the filling over the pecans.
  3. Bake: Bake for 20–25 minutes until set. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
