  • 1/3 cup powdered sugar
  • 1 tsp vanilla extract

Instructions

  1. Prepare the crust: Line a muffin tin with 6 cupcake liners. In a bowl, combine the digestive biscuit crumbs, melted butter, and granulated sugar. Mix until the texture resembles wet sand. Press the mixture firmly into the bottom of each liner to form the crust, and chill for 10–15 minutes.
  2. Make the filling: In a mixing bowl, beat the softened cream cheese until smooth. Add the powdered sugar and vanilla extract, mixing until fully combined.
  3. Whip the cream: In a separate bowl, whip the heavy cream until stiff peaks form, then gently fold it into the cream cheese mixture to create a light, fluffy filling.
  4. Assemble cheesecakes: Place one mini Jammie Dodger into each liner on top of the chilled crust. Spoon the cheesecake filling evenly over each cookie base, smoothing the tops.
  5. Add jam topping: Add a small dollop of raspberry or strawberry jam in the center of each cheesecake and gently swirl it with a toothpick to create a decorative pattern.
